Cocoa Protein Pancakes

I am a little obsessed with the food I eat :P. I prepare this delicious pancakes for breakfast with almost no carbs, and the carbs are from oats and banana, so satisfying without worrying about the calories! You need very few ingredients to prepare this yummy recipe.

  • A blender
  • A nonstick pan
  • Oats - 2 Tablespoon
  • Milk - 2 Tablespoon
  • 4 Eggs
  • 1 or 2 scoop Protein Powder (The flavor of the protein powder depends on your choice and amount of it on your diet, but for the flavor, I recommend not to interfere with the flavor you use for the sauce. For example, I used vanilla flavor protein powder.)
  • Powder Cocoa 1 Tablespoon
  • 1 Medium Banana
  • Nuts - The type depends on your choice, I use almonds or peanuts.
  • Quark (if you are in Germany) or Greek Yoghurt - 125 gr (2.5 Tablespoon)
  • Butter, or your regular product to make it nonsticking

First, add milk, oats, protein powder, and Cocoa into your blender and crack the eggs while separating whites on top of them. Give a good stir. Instead of using flour we used oats, so a really good mix should be made to get rid of the nonhomogeneous texture. 

When the mixture is ready, heat up the frying pan to a medium heat, and grease it. I do it with a fork and a piece of butter quickly. Then pour the mixture, this depends highly how strong your cooking appliance is (actually depends on how much heat transferred per time interval) and wait at least 40-45 seconds, then test the edges gently with a spatula. If the spatula goes beneath without harming the shape of the pancake, (generally it is ok when bubbles are starting to form up in the middle) it is ok for a quick flip. Flip it wait for another 40-45 seconds. I flip it frequently to try to make the surface even, colorwise.I like it that way.

After all of the mixture is consumed, you can pass to the second phase, which is making the banana-cream. I recommend using an organic banana and washing it very good for this because I use at least half of the banana peel too. It is rich in tryptophan which is an essential compound for serotonin which is also promoting muscle growth. Banana peel is also a good source of fiber.Cut the banana in half and if you like use all of the peel if you don't just peel one-half and put the banana in the blender. Add yogurt or quark, and give it a very good stir. If you are using low-fat quark a little water or milk can be added to achieve the desired consistency.

When everything is done, I usually like to serve it in an unnecessarily big plate, putting the pancakes in the middle, giving it a cut I like, and pouring the sauce on it. Then finally, you can sprinkle the cracked or whole nuts which I use and do it carelessly because it looks better. And enjoy feeding your stomach and eyes! Eat it while sipping coffee from a full big mug ;)
